Get Lots of Macro Nutrients in This Microgreen Pea Shoot, Pineapple & Ginger Juice
There is nothing quite like heading to the fridge and pouring a glass of sweet fruit juice. Am I right?! Our kids go crazy when we've got orange juice in the fridge. It's not an all-the-time option, but when it's there, they enjoy it. We don't stock drinks in our house, other than water and milk, because it's way too easy to get hooked on sugary drinks, but, every once in a while a treat is nice! Exotic-tasting treats are even better! When you treat yourself, don't you appreciate knowing the treat includes a pleasant escape from reality and is somewhat guilt-free because it's packed with organically grown, nutritious, non-GMO ingredients? If so, this post is for you—someone who wants a sweet treat, but doesn't want to head down the rabbit hole of processed sugars and ingredients that are impossible to pronounce. This quick and easy recipe uses fresh fruit and pea shoot microgreens to satisfy a discriminating sweet tooth while providing many beneficial nutrients at the same time. Pea shoot microgreens are on the sweet side, so they're a great microgreen option for juice and smoothie recipes like this one. Don't have a juicer, no problem, make this a smoothie instead with your blender. Caution—guilt-free zone ahead! This juice is better than cake—it's like having your cake and eating it too.
Microgreen Juice Ingredients
Juice of one whole pineapple
100 grams pea shoot microgreens
1 teaspoon ginger
How to Make This Microgreen Pea Shoot, Pineapple, and Ginger Juice
Use a juicer to get all the juice out of a fresh pineapple. We threw the core and rinds of the pineapple in when juicing it to get as much juice as possible. If you don't have a juicer, slice up the pineapple and add the chunks to a blender instead.
Add pea shoot microgreens to the juicer or blender.
If you're going for a bitey kick, start by adding a teaspoon of freshly grated ginger. You can always add more, but you can't take it back out once you add it, so start small and taste test as you go!
3 Tips to Take This Microgreen Juice Over The Top
Use fresh ingredients. Fresh is always best! If you can't swing getting a fresh pineapple, grab a few cans of store-bought juice. Our final recipe yielded roughly four cups of juice, so keep in mind you'll need around that much juice to add to a blender with the pea shoots and ginger.
Choose an accent ingredient. Pea shoots and pineapple are the sweet juicy base in this recipe. We decided to go on the bitey side and use ginger as our accent ingredient because we like a bit of kick, but if a spicy kick isn't your deal, feel free to skip the ginger and keep it simple with just the pea and pineapple juice or add an accent ingredient that better suits your tastes. Bananas would be a great, mild option and would thicken up a juice.
Freeze it! If you're sticking with a juice, especially one with a strong flavor—like ours, with ginger—consider freezing it in an ice cube tray and using the cubes later in whatever sort of cold beverage tickles your fancy!
