How to Make This Pea Shoot Microgreens & Apple Smoothie

You'll need a blender and an apple slicer will be helpful to make quick work of this smoothie. Other than that, it's a breeze. 😉

Ingredients

  • 4 oz crushed ice

  • 8 oz almond milk

  • 1 apple, sliced

  • 25g pea shoots (microgreens)

 
 

Instructions

  • Add crushed ice to blender

  • Cover crushed ice with almond milk, and blend until smooth

  • Toss in apple slices a few at a time

  • Toss in pea shoot microgreens a few at a time

  • Add almond milk and/or crushed ice as needed to create the texture that pleases your pallet!

  • If you're going on the heavy side w/ the pea shoot microgreens, pick a sweeter apple, like honey crisp.

  • Play around with the amount of pea shoot microgreens until you find the flavor that excites you most. Twenty-five grams is pretty light on the pea. It'll be about a handful. Pea is pretty mild though and it's possible to use a lot more to get more of that green-smoothy flavor if that's what you're expecting.

  • Want to add a bit of tartness? If so, throw in a quick splash of lemon juice—maybe a 1/2 tablespoon. BAM!

  • Feeling fancy? Garnish with a fancy straw and a few mint or stevia leaves.
