Dr. Qin Wang puts it simply in Xiao (2012), "Because microgreens are harvested right after germination, all the nutrients they need to grow are there. If they are harvested at the right time, they are very concentrated with nutrients, and the flavor and texture is also good (emphasis added).”
When people ask us what microgreens are, Dr. Wang's words above are our go to response! Microgreens are baby veggies, and in our opinion, the right time to harvest is between the first and second sets of leaves. Because the plant is harvested early, nutrients are retained in the plant because they are not invested in growing the plant to maturity.
For this reason, microgreens are nutrient-rich! We also use only non-GMO seeds and all of our greens are organically-grown.
As if that's not enough, depending on the specific plant, microgreen nutrient content is anywhere from four to 40 times more abundant than that of mature plants (Xiao, 2012).
