Butternut Squash Soup Recipe and Pea Microgreens Garnish

Pea shoot microgreens make the most awesome garnish for this homemade butternut squash soup… we’re not partial or anything 😂! Seriously though, the pea shoot microgreens are like little bursts of freshness that add a crunchy, slightly sweet contrast to the creamy soup. Just add one shoot, or sprinkle a handful on top, and it's like a mini garden on your soup that adds some pizzaz. It's a simple touch that takes your soup from ordinary to extraordinary. Plus, they're super healthy, so why not? Little touches like this make your homemade soup feel extra special and that’s what serving others is all about… making them feel special.

 

How to Prepare Butternut Squash Soup

You’ll need a stick blender if you’ve got one. If you don’t have one, consider getting one! It’s a specialty item, but we seem to use ours a lot—especially now in soup and gravy season!

If the stick blender is a no-go, a food processor or blender will do the trick.

Ingredients

  • 1 large butternut squash

  • 1 small sweet onion, chopped

  • 1 clove garlic, chopped

  • 2 cups chicken broth

  • 4 tbsp butter

  • salt, to taste

  • pepper, to taste

  • Pea Shoot Microgreens, as needed

 
 

Instructions

  • Seed, peel, and cube the butternut squash.

  • Melt the butter over medium heat in a stock pot

  • Add chopped onions and garlic and cook for about five minutes until translucent.

  • Add cubed butternut squash and 1 cup of the chicken broth.

  • Turn the heat up to high, cover, and bring the broth to a boil.

  • Stir occasionally to make sure ingredients do not stick to the bottom of the pot.

  • Add more broth as necessary if soup becomes too thick.

  • Cook until squash is fork tender, about five to seven minutes.

  • Remove from heat.

  • Blend in pot using stick blender, or transfer ingredients to food processor or blender for blending.

  • Blend until smooth, adding more broth if needed to achieve a baby-food like texture.

  • Season, to taste, with salt and pepper.

  • Garnish, garnish, garnish!

Serve hot and enjoy!

Prep Tips

It’s okay if the onions and garlic brown, just don’t let them burn. Also, to preserve the uniform color of the soup, use white pepper instead of black pepper. You’ll get the awesome peppery flavor, without the speckled look.

Getting the Soup Texture Right

Depending on the size of your squash, you may need more or less broth to achieve the desired consistency. One to two cups usually does the trick, but keep in mind, these measurements are only a guide.

If the standard smooth buttery velvety texture isn’t your thing, after cooking the squash, set some off to the side before blending the rest. Then, add it back in after you’re done blending. Mixing in some whole squash, when the rest is blended to velvety perfection is a great option to give the soup a bit heartier of a texture.

Dress it Up

Consider the above recipe a base, just like last week’s Hearty Fall Cream of Cauliflower Soup. With that in mind, feel free to add whatever accouterments you like to turn this recipe into anything from a small side, to the whole meal!

  • Grilled chicken, or bacon, are a great place to start!

  • Sprinkle croutons on top for an extra crunch

  • Use heavy cream to drizzle a fun design over the top of the soup before serving to up the aesthetic game (this would look great along with the pea shoot microgreen garnish)!
