Pea Sauce Made with Microgreen Pea Shoots

Pea shoot microgreens also offer a more concentrated and robust pea flavor. Unlike regular peas, which can be starchy or lose some of their sweetness during cooking, pea shoot microgreens maintain their delicate sweet flavor. They also contain a wealth of vitamins and nutrients, making your sauce not only tastier but also healthier.

How to Make This Simple Pea Sauce Recipe

You’ll need a stick blender if you’ve got one. If you don’t have one, consider getting one! It’s a specialty item, but we seem to use ours a lot—especially now in soup and gravy season!

Ingredients

  • 1 small sweet onion, chopped

  • 1 clove garlic, chopped

  • 1/4 cup chicken broth

  • 4 tbsp butter

  • 100g Pea Shoot Microgreens, coarsely chopped

  • Salt, to taste

  • Pepper, to taste

 
 

Instructions

  • Melt the butter in a small sauce pan over medium heat.

  • Add onion and garlic.

  • Cook for about five minutes until translucent.

  • Add pea shoot microgreens and cook until soft and wilted, about one to two minutes.

  • Remove from heat.

  • Pour into an upright container (if using a stick blender, a mason jar works well), or transfer ingredients to food processor or blender.

  • Blend until texture is smooth and color is uniform.

  • If too thick, add chicken broth 1/8 cup at a time (see pro notes below!).

  • Add salt and pepper to taste.

This sauce is useful as a garnish (as in last week’s Butternut Squash Soup Recipe) or over grilled meat, fish, to toss roasted vegetables in, etc.

Pea Sauce like a PRO!

Ingredient substitutions

Pea sauce is a classic sauce, but creating it with pea shoot microgreens is a new sort of twist. Of course, you can use the same recipe, only with traditional peas instead of pea shoot microgreens. That said, we’re a bit partial to microgreens for obvious reasons.

Another substitution relates to the chicken broth. We use chicken broth because we usually have it handy, but you’re more than welcome to use vegetable broth, or even water if your pantry is pretty bare. Which flavor do you appreciate more? Go that route when choosing a liquid!

On flavor Intensity

Do you like intense flavor? If so, try using one or two shallots in place of the onion and garlic. Shallots offer a very similar flavor profile compared to the onion and garlic, just a bit more intense!

On Consistency

The texture of the sauce when blending will very much depend on the water content of the pea shoots (or peas if you’re going that route). If you’re a tad unfamiliar with pea sauce, keep in mind that (just like the name suggests) it’s a sauce—not a paste. It should be velvety, not chunky. But paste-like and chunky might be exactly where this sauce heads when you start blending. To get the velvety smooth texture, drizzle in whatever liquid you choose while while blending (see above ingredient substitutions). Add very small amounts of liquid at a time, think a tablespoon or less, and frequently stop blending to make sure the texture doesn’t get too watery. Stop adding liquid and blending once you achieve a smooth texture and the color is uniform… i.e…. if it’s not smooth, add a bit more liquid, if the color isn’t uniform, keep blending. Pause blending frequently to check on your progress.
